Vegan Tofu Alfredo Sauce

Alfredo is one of my all time favorite pasta sauces, but I have not had it in forever because of my dairy allergy. Although this isn’t an exact replica of regular alfredo sauce, it is really delicious. It is super creamy and the tofu adds some extra protein into the sauce to keep you fuller for longer.

Anything that has the word ‘tofu’ in it my family is immediately intimidated and doesn’t want to try it, especially the boys in my family (my mom is a little more adventurous). My brothers refuse to try tofu and my dad is always sketched out by it. In fact he asked my mom what the pasta was in the fridge and she told him it was an alfredo sauce made with tofu and he goes “cmon ew that’s disgusting” lol. Well, I worked my magic and made my dad try the pasta and he really liked it! It definitely took some convincing to get my dad to try it, but once he did he even went back for seconds! So I definitely take that as a win, and I guess anything is possible considering I got my Dad to like a tofu dish. Next time I make this sauce I am 100% giving it to my brothers and not telling them what is in it so I can see their reactions when I tell them there is tofu in it. I have done this in the past with similar things such as chickpeas- I made chickpea cookie dough and my brother really liked it and once I said there was chickpeas in it he was absolutely not having it anymore. 

I loved making this recipe, because I forgot how much I loved fettucini pasta- it is such an underrated noodle in my opinion lol. I love making different pasta dishes because I love changing up and buying the weirdest shaped pastas. I definitely want to use my knowledge from a cooking class I took in Italy to attempt to make homemade pasta one day, although I am not so sure how well that would workout. 

I topped this dish with extra nutritional yeast and some red pepper flakes to add some heat. Also, if you are not vegan/dairy free and do not have nutritional yeast or would rather an alternative, you can always use parmesan or some other type of cheese like shredded pecorino. Also, if you are not vegan and you would like to add some more protein to this dish, I topped it with grilled shrimp one night for dinner and it was absolutely amazing and so filling!


  • -1/2 pack of sprouted tofu (I got this at Trader Joe’s…it’s the smaller package)
  • -2-3 cloves of garlic
  • -1 TSP red wine vinegar
  • -3.5 TBS olive oil
  • -salt and pepper (a lot)
  • -2 TBS nutritional yeast (if not vegan you can sub Parmesan cheese)
  • -might need to add a drop or two of water to smooth it out
  • -1/2 box fettuccini


  1. cook pasta according to box directions. 
  2. While the pasta is cooking add all ingredients to a blender and blend in high until everything is mixed together.
  3. Add the sauce to the noodles and top with more nutritional yeast/ cheese and red pepper flakes!
