Gluten Free and Dairy Free Funfetti Cookies

These are probably one of my favorite cookies I have ever created, because who doesn’t love funfetti/ birthday cake flavored things? Just add sprinkles and everything is immediately better! But you do not need to wait for someone’s special day to make these cookies, I make these all the time!

My oldest brother is an extremely picky eater and whenever I have a new recipe he always asks “what’s the catch?” If I tell him that something is dairy free/ gluten free/ vegan he immediately freaks out and says he doesn’t want to try them or that they are going to be “gross.” Once I finally convinced him to give these cookies a try, despite them being gluten and dairy free, he said “wow these are actually really good.” Such a win in my book. He even went back for cookie number two, so I knew these were a hit.

Although many people have probably never baked with Cashew Butter (and maybe never even heard of it) I really like it in these cookies. It is definitely a different taste, but I have come to love it. You can find cashew butter at most grocery stores (most stores even have their own brand of it too. And if not Whole Foods definitely carries it).

Almond extract is the other very important ingredient in these cookies. The Almond extract gives these cookies a cakey sort of taste (sort of like those Italian Rainbow cookies you get from bakeries). Very little almond extract goes a long way though, it has a very powerful flavor so be sure that you only use ½ tsp.

Cookie Ingredients:

  • 2 Cups of Almond Flour (you should be able to use other types of flour as well)
  • 1 Tsp of Baking powder
  • 1 Tsp of Baking soda
  • 1 egg
  • ¼ Cup of maple syrup
  • ½ Tsp almond extract
  • ½ Cup of Cashew Butter
  • ½ Tsp Salt
  • ¼ Cup sprinkles

*Refrigerate dough for 30 minutes

Icing Ingredients:

  • ¼ Cup + 2 TBS of powdered sugar
  • ½ TSP of vanilla extract
  • 1 TBS of almond milk

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Mix together the wet ingredients (egg, maple syrup, and almond extract)
  3. Then add the dry ingredients to the wet mixture. (Add almond flour, baking powder, baking soda, salt and sprinkles)
  4. Place the dough in the fridge for 30 minutes
  5. Line a baking sheet with parchment paper
  6. Use an ice cream scooper to scoop the dough into balls and then press down lightly to form cookies
  7. Bake for 20-25 minutes or until the cookies are golden brown
  8. While the cookies are fully cooling begin to make the icing
  9. Mix all the icing ingredients together and drizzle on top of the fully cooled cookies.
