Garlic and Rosemary Roasted Potatoes
Okay, I personally think that potatoes are one of the most superior foods that exist. Yes, I am Irish but that is not why I think this lol. Potatoes are so versatile and make up some of the best things- chips, fries, pasta (gnocchi), etc. The limit does not exist with potato creations and I absolutely love coming up with recipes that involve potatoes.
I absolutely love to make homemade French fries, chips, or potato wedges because I love switching up all the different flavor and spice combinations and dipping them into tons of different sauces. Also, you do not have to use heavily processed oils but instead you can use avocado oil, olive oil, etc.
These Garlic and Rosemary roasted potatoes are a fan favorite in my house, and they are so easy so we make them all the time with dinner. I also really like meal prepping potatoes like this because they can be for dinner, you can eat them for breakfast with eggs or something, and I also love adding them to greens and salads for lunch. I love just prepping a big batch at the beginning of the week and then using my airfryer to re-toast them days later.
If you have fresh garlic you can definitely use that for these potatoes, but I think garlic powder works just fine. You can also use any type of potatoes you want, I usually use gold or russet potatoes, but you can really use any.
- About 3 large gold potatoes
- Olive or avocado oil
- Garlic Powder
- Onion Powder (optional)
- Fresh Rosemary
- Preheat oven to 400 degrees
- Dice potatoes and lay on a baking sheet
- Cover potatoes with oil and a heavy sprinkle of salt, garlic powder onion powder, and a few sprigs of fresh rosemary.
- Use your hands to make sure that the potatoes are fully coated with oil and seasoning
- Bake until golden brown (I would say at least 45 minutes)
