Dairy Free and Gluten Free Double Chocolate Banana Bread

Ok so I think this might be my best banana bread on my website (and yes I know I have said that about every banana bread on my website) but oh my gosh this is more like a dessert. This banana bread has the best texture and is so fudgy I cannot get enough of it.

I had a special request to make this for my neighbors and it was gone in a second, everyone loved it! I also had my friend from college taste test it and she couldn’t have said better things about it. So if that does not convince you to make this I don’t know what will.

I wanted to make this recipe gluten free, because I know a lot of my followers either have or know someone with a gluten allergy or intolerance or actually prefer gluten free baked goods. I also really like baking with almond flour because I like the consistency and I really do like the taste. You would have absolutely no idea that this banana bread is gluten free.

You can also make this recipe vegan by substituting flax eggs, but I find that it makes the bread a little bit of a different texture.

I used cacao powder to give this bread a chocolatey flavor, but you can also use regular cocoa powder. I also used some chocolate chips to make it a tiny bit more chocolatey, because too much chocolate never killed anybody.

Lastly, a tip when making this bread is that when you are baking it check for when it is just cooked through (maybe even a little gooey still) and then take it out of the oven and use the parchment paper to take it out of the dish to let fully cool. When you do this the bread will be the perfect texture.

Ingredients:

  • 2 medium ripe bananas, mashed
  • 2 eggs
  • 2 TBS maple syrup
  • 2 TBS coconut oil, melted
  • 1.5 tsp vanilla extract
  • ¼ Cup of creamy peanut butter (or any nut butter)
  • 1.5 Cups of almond flour
  • ½ Cup of cacao or cocoa powder
  • 1 TSP baking powder
  • 1 TSP baking soda
  • Pinch of sea salt
  • About ¼ Cup- ½ Cup of chocolate chips

Directions:

  1. Preheat the oven to 350 degrees
  2. Mash the banana with a fork in a large mixing bowl
  3. Add the eggs, maple syrup, melted coconut oil, vanilla extract and nut butter into that bowl and mix all the wet ingredients well.
  4. Add the almond flour, cocoa powder, baking powder, baking soda, and salt to the mixing bowl and mix until a batter consistency forms.
  5. Use a rubber spatula to fold in the chocolate chips
  6. Line a loaf pan with parchment paper and pour the mixture into the dish.
  7. Cook for about 35-40 minutes or until the bread is just cooked through- as soon as you can stick a knife in the bread with little to no batter coming off remove the bread from the oven.
  8. Try to take the bread out of the pan by pulling on the parchment paper sides and let it fully cool
  9. Slice and enjoy!
