Cilantro Lime & Bean Rice

Ok so this is one of the easiest recipes of all time and I literally always have it in my fridge. I love prepping it in the beginning of the week and having it on hand for the whole week. It is the perfect side dish, it is great to add to bowls, tacos, salads, etc. This dish is a must every time we make tacos and this is the only way for me to get my brothers to eat beans! I think my favorite dish that I use this rice for is probably a taco salad bowl. I make taco salad bowls all the time for lunch and dinner because they are so customizable and I never get sick of them- I usually start with a base of lettuce, add a scoop of cilantro lime & black bean rice, red onion, tomatoes, avocado, corn, (or any veggies that I have on hand), and a protein. I usually change up the protein to whatever I had for dinner the night before (grilled chicken, tofu, beef, etc), or I like to make a veggie burger and add that on top if I do not have a protein prepped. My favorite veggie burger to add to these bowls are Dr. Pragers California veggie burgers!


  • 1.5 cups of Rice (You can use any, Short grain/long grain, brown rice, jasmine rice- I have made it with all kinds of rice and it is delicious no matter which kind of rice you choose!)
  • 3 cups of water (you might have to add more at the end if it is under cooked for your liking)
  • A dash of olive oil
  • 1 lime
  • 1 can of black beans
  • Huge handful of fresh cilantro
  • Salt


  1. Add rice and water to a pot and bring it up to a boil.
  2. Once the water starts to boil, cover the pot with a lid and bring it down to a low simmer. Stir often
  3. This should take abut 20 minutes, but keep an eye on it!
  4. Once the rice is fully cooked add in a dash of olive oil, the drained and rinsed beans, lime juice, cilantro and salt.
  5. Taste test and see if you need to add anything.
  6. ENJOY!!
